Hello a beautiful day. It is too long time that I’ve not posts my recipe in the b l o g!
Because there are so many things to do, I would say normally in my facebook is always update.
Now there are 11 months I lives in Dubai, and next month on February 25, 2013 is 1 year lives in Dubai. There are many things happen and I can say it is more than 50% I like Dubai, it’s Good to live here.
Anyway, come back and enjoy my recipe today.
The menu today is a fusion food ~ Thai and Europe, my fan page would like me to cook a menu which have spaghetti for ingredients. Once I checked I don’t have spaghetti at that time, but Penne is available in my kitchen. And also has Tilapia fillet!
That’s why I cook this menu
"Crispy Tilapia with Thai basil and Penne"
"Crispy Tilapia with Thai basil and Penne"
- 60 grams Penne (I choose number 5 / 8 minutes boil)
- 3-4 green chilies, red (more savory up to your preference).
- 3 cloves garlic (peeled).
- 100 grams mushrooms, straw mushrooms, or else such as mushroom or champagne mushroom
- 3-4 small dried chilies (fried)
- 10 Thai basil leaves, clean
- 200 grams tilapia fish fillet (cleaned and cut to small size, or sea bass fillet is optional)
- 100 grams all purpose flour
- 1-2 cup Vegetable oil (for frying fish)
- 1-2 tablespoons stir-fry
Seasoning:
1 tablespoon for Oyster sauce
½ tablespoon for Soy sauce
2-3 tablespoons of chicken stock or water
½ tablespoon for Soy sauce
2-3 tablespoons of chicken stock or water
1. Coat the fish with flour and deep fried in oil, heat to 180 C about 5 minutes until the fish cooked, golden brown. Drain it on the kitchen paper. And set a side.
2. Deep fried dry chills around 7-10 second. Drain oil and set aside, then cut into small pieces and set aside.
3. In the mortar pound chili and garlic.
4. Put the Penne in hot water bring to boiled until 8 minutes or the pasta half cooked, drain, put little olive oil and keep a side.
5. Heat the oil the wok until hot, add the pound chili and garlic, stir fried around 30 second, then add the slice mushroom. Stir fried around 1 minute.
7. Put in a lovely plate and ready to serve you all “Crispy Tilapia with holy basil and Penne” Sprinkle and fried chili.
